OMW Beginner Help

Are there OMW and MO2 beginners guides somewhere?
I have installed Open Morrowind and Mod Organizer 2.
The folder with OMW in it does not look like the regular MW folder structure, ie. MW>Data Files>Icons, Meshes, etc. Is the launcher pointing somewhere else? When I click on openmorrowind.exe the game opens and has the Open Morrowind note in the upper left corner. However, there are no mods listed.
I have one installation just on the C:\ drive and another through Steam, I think. I do own the GOTY edition and the installation from my CD is the one on the C:\ drive. I do not play through Steam.
Mod Organizer 2 is showing several mods but I cannot seem to get them to open or install or whatever.
