A few years ago, three years was very old for a GPU. However, Nvidia have realised that they can make more money by not releasing new GPUs very often and charging more for them when they do, so there's only one generation of cards that's newer, and none aim for the same price point as the GTX 1050....

There are problems with VR right now that aren't technical, but are still problematic. Simply put, the only mainstream VR API that's compatible with OpenMW's GPL licence is OpenXR, and OpenXR doesn't support the headsets people actually have yet. This is really weird. Normally, pink textures mean that your graphics driver isn't exposing S3TC support, but there are clearly DDS textures working in those screenshots. At least some of the menu elements use TGA textures, so maybe something weird's going on with TGA support, such as the TGA plugin...

There's a very slim chance it's just opening off-screen. I don't think I've seen OpenMW do this, but I know it can happen with other applications. Try holding the windows key on your keyboard down and pressing the arrow keys after you launch things and seeing what happens.
