I initially tried disabling terrain shadows fixing that would fix it but it didn't, then yesterday I tried going in the config file again and setting all shadows to false, and the lighting was back to being normal. So I think it's a shadow issue. I don't know if there's more useful info I can give, ...

I only edited once to add a screenshot, then my post disappeared. I didn't know the moderation system made posts disappear when editing, I've never seen that anywhere before and I had no message or notification telling me what happened, it just disappeared. Hey, I just wanted to say, I started playing Morrowind with OpenMW for the first time on a new M1 Macbook Air, but I'm pretty sure the lighting is a bit broken.
