settings-default.cfg content in after-install user settings.cfg file
Up to this moment I wasn't aware of the settings-default.cfg file existence. Wouldn't it be a good idea to place it's content into user's settings.cfg at the moment of installation of OpenMW? I think it would make tweaking the settings.cfg much easier for new users, as they don't have to look up online how to do it - they just need to know the path to settings.cfg and be aware of it's existence. Right now distant land and shadows require modifying the settings, and I believe both are basic features for people with machines capable of using them. I suspect that most users have machines capable of using them.

In theory, settings.cfg is not supposed to be modified manually, and any setting it has should be accessible in a GUI. That's not the case, though...
Shadow settings will be added to a GUI once they're reorganized and finalized. Shadows still have a lot of room for improvements.
