Formost, I am a Morrowind fan and OpenMW is a very great project !
I deployed OpenMW on ArchLinux
I have 2 years experience in C++.
Could someone suggest me an issue on the roadmap ?
note: I have no knowledge about the scripting engine. I know some Qt

I've never really developped for OpenMW (writing manual pages is not developping), so take my suggestion for what they are, suggestion from a guy following the project since a long time, not demand from a main developper
You could try one of them :
- https://bugs.openmw.org/issues/652 GMST Verfifier, other verifier has already been implemented, so you can check them for the integration to the inreface. Here the verifying part it quite simple because it's checking the value of variable

Welcome! Issue #652 is a good choice, assuming being a fan of MW also means some experience with modding.
There is also the pending rewrite of the user settings system in OpenMW-CS (see this thread). This is however a larger tasks.

A French site has made a comprehensive list of GMST with the default value :
