Is it okay to update a mod during gameplay?

I have Morrowind Rebirth LITE installed and I'm far into the gameplay, and because Rebirth LITE is getting an update soon, can I update it without replaying the game from the start? Thanks.

Sort of. If you have an item in your inventory that was deleted in the next patch of the mod... you have an item that doesn't exist. No substantial harm done, though.

OpenMW has been really good at wiping clean any bad references and such after I turn off a mod or toggle off a continent. It's rather comforting.

Depends on the mod and exactly what's changed. More complex mods can end up broken if preexisting state gets carried over while newly added state is left at the default. The breakage can be minor or severe, readily apparent or not realized until much later. It would be good to ask the mod creator if there's any changes that can interfere with existing games using an older version, or if it's recommended to start a new game when updating.

Reading through the Morrowind Rebirth description page, the author talks about updating old game saves with Wyre Mash:

We don't have that feature yet on Linux, right?
