My current install has texture problems with heather and corkbulb, as well as several plants that are still containers (comberry for one, don't remember the others off the top of my head).

There's a tool provided by OpenMW called "essimporter" that you can use to convert a Vanilla saved game to an OpenMW saved game.

I haven't used it, and so won't guarantee that i will work for everything, but it's certainly worth trying.

Where does openmw store the datafiles list? My mods aren't listed on the morrowind.ini? In a file called 'openmw.cfg'.
